MOUNT Cotton chef John Jamieson has cooked up bronze medals for a three course meal in the finals of Australia's longest running culinary competition for young chefs.
Mr Jamieson, and teammate Ryan Woodward, who both work at Otto Brisbane, particularly impressed the Nestle Golden Chef's Hat Award judges with their entree.
For that dish they served up spring garden peas with pickled cucumber, smoked ricotta and garden herbs.
Mr Jamieson, a new face to this year's competition, was proud to be representing Queensland. The pair won their place in the finals during a regional cook-off in Brisbane in June.
"We felt very energetic and focussed going into the competition," Mr Jamieson said. "It's been such a great experience and we've really enjoyed the atmosphere. Cooking in the public arena is a real adrenalin rush.
"It's a great competition to be involved in, it's not like anything else."
National champions Giles Gabutina and Alessio Nogarotto from NSW Metro won a $15,000 culinary trip to North America.
Nestle Professional executive chef Mark Clayton said that competitors performed to an exceptional level.
"They were focused, determined and pushed themselves to deliver some outstanding dishes," Mr Clayton said. "The future looks bright for these young chefs."
